The tastiest ground coffee pancakes recipe

Pancake day is fast approaching in the UK, and since launching a new GamerGrindCo coffee roastery on that side of the pond we figured we’d add our caffeine touch and get involved with a delicious recipe to show you how to make coffee pancakes with ground coffee or coffee beans rather than instant coffee.

Two much loved morning go-to’s for pretty much everybody – pancakes and coffee. Combined they’re an unstoppable force, and you can make them yourself with the following recipe. Made with our own ground GamerGrindCo coffee beans.

Ingredients

Ground coffee pancakes are quick and easy to make yourself, and work great for breakfast or a quick snack to give you a nice energy boost even if it’s not pancake day. Here’s what you’ll need:

  • 2 tablespoons of any finely ground GamerGrindCo coffee. If you have a grinder you can order whole bean and grind it yourself, otherwise make sure you choose “Fine” from the grind options. For this recipe we used our best-selling Kill-Streak coffee.
  • 1 medium egg
  • ½ cup (120ml) of milk
  • 1 teaspoon of vinegar
  • 3.35oz (95g) of plain/all-purpose flour
  • 2 tablespoons of powdered/icing sugar
  • ¾ teaspoon of baking powder
  • 1 teaspoon of butter
  • Optional: Honey, ice cream or Greek yogurt, or toppings of choice.

You’ll also need a whisk, frying pan, and large pouring jug or a mixing bowl and a ladle.

Directions

Here’s how it’s done;

Step one: Add the flour, powdered/icing sugar, baking powder, and coffee grounds to a large pouring jug or mixing bowl and mix well.

Step two: Add the milk, vinegar, and 2 tablespoons of yogurt, along with a skilfully cracked egg (bonus points for no egg shell).

Step three: Gently whisk your concoction until it starts to meld together, then mix well until there are no lumps and you see small bubbles rising to the top of the batter.

Step four: Put your frying pan on a medium heat and add your butter, be sure to spread the butter over the entire surface of the frying pan once it has melted.

Step five: Slowly pour the jug or add a ladleful of your coffee batter to the frying pan, ensuring a nice even consistency across the surface of the pan. Cook it on a low/medium heat for a few minutes until the bottom is cooked to a light brown color.

Step six: Now the fun part. Flip the pancake and cook the other side until it’s also light brown in color. Style points are awarded for the height and accuracy of the flip, and any videos sent to us on social media may be shared with scores given.

Step seven: Once both sides of the pancake are done, time to slide it onto a plate, and repeat the process until all of the batter is gone. To keep cooked pancakes warm until serving you can put them in the oven on a low heat.

Step eight: Now all your pancakes are ready it’s time to add your toppings and serve. Honey and ice cream or Greek yogurt work great, but you can always get creative and try some syrup, berries, or even sliced almonds.
